Great for Halloween or Thanksgiving. Its an easy pumpkin recipe that is fun to make and kids love it. Makes an awesome side dish too for your Thanksgiving dinner, and it cost effective because with just one pumpkin you can make 3 different recipes! Here is how.
Step 1—- The pumpkin soup:
- Carve a small pumpkin by cutting with a sharp knife a circle on top of the pumpkin big enough to fit in your fist (Arox. 3″ diameter).
- Pull out all of the seeds and set aside.
- Cut and scrap carefully the inside walls of the pumpkin. Avoid puncturing the pumpkin’s shell. Use a spoon to scrap out all the stuff from the pumpkin and place in a cooking pot.
- Add water to the pot just to cover the pumpkin’s scraps (don’t add too much liquid). Add some 3 green onions or a whole garlic cut in half or a 1/4 peeled large sweet onion.
- Boil at high temperature until pieces are tender.
- Set aside to cool down and add 1/4 cup heavy cream, salt and cayenne pepper to taste.
- Blend until smooth.
- Warm before serving and serve into empty pumpkin as bowls.
- Rinse seeds and pat dry with paper towel.
- Place on baking sheet or pan and roast for 20 min. at 300 degrees.
- Sprinkle sea salt and 1/2 tsp grape seed oil and return to oven for about 45 min. or until golden brown and crunchy.
Step 3—- On the side of any meal: After everyone has enjoyed the crafty soup, save the the pumpkin bowels in the fridge for tomorrow.
- Tip 1 —-With a butcher’s knife or any large sharp one, cut the pumpkins in rounds and place them on the baking sheet and over parchment paper.
- Brush some melted ghee butter on each round and sprinkle some salt and crushed black pepper and dry basil (optional).
- Oven roast for aprox. 18 min. at 450 degrees.
- Tip 2 —-If you prefer, just cut the pumpkins in half or into two big rounds to make a shallower pumpkin bowl and save the other
