Breakfast Quinoa Wrap
Easy, high protein and nutritious breakfast for all lifestyles. This wraps are great option for breakfast and any time snack or dinner. Kids love it if you keep the filling simple (e.i. when it only has cheese)
Quinoa Wraps Ingredients
(makes 5 medium size wraps)
1 cup mixed quinoa flour and buckwheat (50-50)
1 tbsp whole wheat flour
1 cup milk or water
1 tbsp grape seed oil
1/4 tsp sea salt
fresh crushed black pepper
1 tbsp fresh chopped parsley or oregano
1 whole egg from free run chickens
In a blender add all ingredients except the flours. Blend at low speed and add progressively the flours until smooth.
Before you start cooking this, be prepared with what you are going to put inside the wrap. Below is the recipe for a nutritious filling.
On a non stick pan add 1/4 tsp butter to melt on a low-med temperature. Add about 1/2 cup of this mixture on to the pan and twirl the pan slightly to shape a thin round of the mixture. let it cook uncovered for about 1 min. or until edges turn slightly brown; then flip and add the filling.
High protein and nutrient dense filling ingredients (for 5-6 wraps)
1 chicken breast cooked and shredded
1/2 cup egg whites from free run chickens
1 tbsp grape seed oil for saute
1 small Roma tomato
2-3 tbsp of chopped onions
1 cup chopped fresh spinach
1/2 tsp turmeric
1/2 cup shredded mozzarella cheese
salt, black pepper and paprika to taste
In a medium size skillet saute the onions, tomatoes and chicken.
Whisk the egg whites and the spices all together, then add to the pan with the chicken and promptly mix with a spatula until all is well incorporated and slightly humid (do not over cook eggs). Set aside and add the chopped spinach and blend them in.
Start preparing one by one the wraps by filling the wraps once you flip them the first time. Put enough filling in the center of the wrap and in column shape, add some shredder cheese at this point on top. fold in sides of wrap to literally “wrap” in the filling, or just gently roll the roll with the
filling inside. let it softly cook for a minute, then turn gently and cook for a few seconds or until the wrap is tight sealed.
