Wrap It : Easy lunches
This is a quick and easy way to take a healthy lunch to work. Hey! it’s gluten free, and full of veggies and flavor.
Washed collard green leaf (1 leaf makes 1 wrap)
1 can drained albacore white tuna in water and low sodium.
1 Tbsp 1/2 fat real mayonnaise (preferably homemade)
1/4 tsp mustard
Crushed black pepper to taste
1/2 medium avocado cut in squares
2 Tbsp. chopped tomatoes
1 tbsp created radish
Place tuna in a small bowl and add mayo, mustard, pepper and mix well. Add tomatoes and radishes and mix. Add last the avocados pieces and slightly fold in the mixture
Use half of the mixture to make 1 wrap. Wrap it up as it show in the pictures.
