Kohlrabi: An alternative to white potatoes

It’s low fat, low sugars, anti-inflammatory and low in carbohydrate. Non GMO yet, and so satisfying.

Kohlrabi Recipe:(Serves 2-3)

3 Kohlrabis, cut and very well peeled. You must remove the outer layer that is thick like the broccoli stem.
1/2 tsp of curry powder
1/4 tsp green curry paste
a pinch of pepper
1/2 med yellow onion.
salt (optional) it really does not need it.
Saute chopped onions in skillet with 1 tbsp of healthy cooking oil, then add the curry powder, stir well and add some water or vegetable broth, then add the kholrabis cut in squares, sprinkle pepper and salt and stir in the curry paste. Cook covered for 5 min.
