This is a creation designed to fit any healthy
diet as well as a low carb diet. The taste resembles the original cheesecake of the past, with that tangy taste of cultured yogurt. With only 6 grams of fat, 12 grams of carbs per serving, this dessert will beat any other in taste and health!
This recipe will fill an 8 1/2 inch round baking pan. So if you have a large size pan, you might consider to double the recipe.
Ingredients for the filling:
1 1/4 cup Greek yogurt (Oikos or Icelandic)
1 Pack original cream cheese softened
3 tbsp. flour
1/2 lemon squeezed
1/2 Tsp. lemon zest from lemon peel
5-6 measuring spoon of Now Stevia Extract Powder
Honey to taste (Optional)
Ingredients for the crust:
1 Tbsp. butter
1/4 Cup Shaved almonds
1/4Cup chopped pitted dates and/or figs (Aprox. 12 dates) plus extra more for syrup.
3 Tbsp. Chia seeds
Ingredients for the syrup:
1-2 Tsp. Apple vinegar (note: For higher acidic percentage in vinegar should consider adding less)
3-4 Tbsp. Turbinado sugar
about 1/4 cup chopped dates
1. Preheat oven to 350F. Chop dates and/or figs into small pieces, and put aside a handful of them in a sauce pan. Using a kitchen helper or a blender chop all the ingredients except the butter and the pieces left in the pan. Use the pulse option in the blender to finely chop and blend almonds, chia and dried fruits. Then stir this mix together with the melted butter in medium bowl until evenly moistened. Press mixture onto the cheesecake pan
1. Preheat the oven to 350F. Place all the filling ingredients in a blender except the flour. Blend until creamy and smooth.
2. Pour the mixture in the pan. Sift the flour on top and blend carefully in folding movement been careful not to scratch the surface of the crust.
4. Bake for 20 min. After the 20 min pass, place an aluminum foil over the pan and bake for another 30 min. or until the stick inserted comes out clean.
Remember that handful of chopped dates you put in the sauce pan?… Its time to make the syrup. Just add to the pan the vinegar, the sugar and heat and stir it until the sugar melts and turns into a light syrup. It only takes about a minute. Top the cheese cake with this syrup to decorate and add extra taste to it.
